Grilled Polenta

Ingredients:

  • 250g polenta (cook as per pack instructions)
  • Pinch salt
  • 100g grated parmesan
  • 50g butter
  • 1 eggplant (chargrilled)
  • 1 tbsp La Gina Tomato Paste
  • 400g La Gina Diced Tomatoes with Basil
  • 50g parmesan (shaved)
  • Handful rocket to serve.

Preparation

PREP - 15MINS

COOKING - 10MINS

 

Cook polenta (as per pack instructions).  Sprinkle grated parmesan to finish.  Pour into greased tray, cover with cling film & refrigerate.  Cut into thick slices, brush with olive oil.  Grill until golden.  Heat oil, add La Gina Tomato Paste, cook for a few minutes and add La Gina Diced Tomatoes with Basil.  Cook for 5 mins.  To serve, spoon tomato over polenta, drizzle with oil, shaved parmesan, rocket & eggplant on the side.
