Chunky Tomatoes

Ingredients:

  • 2 cloves garlic
  • 1/2 an onion & 1/2 a fresh chilli (chopped)
  • Pinch marjoram
  • 1 tbsp La Gina Tomato Paste
  • 800g La Gina Diced Tomatoes
  • 1 tbsp snipped flat parsley
  • 1 cup white wine
  • 100g tin white beans (drained)
  • 4 thick slices sour dough bread
  • 100ml extra virgin olive oil
  • 150ml chicken stock

Preparation

PREP - 5mins

COOKING - 20mins

Slice & fry one garlic clove with chilli until golden. Add onions, cook 2 mins.  Add white wine & reduce by half. Add La Gina Tomato Paste & La Gina Diced Tomatoes. Add stock, white beans & marjoram, simmer 10-15 mins. Add salt & pepper to taste. Sprinkle in parsley. Toast bread & rub with remaining garlic.  Serve bread in a deep plate or bowl pouring over tomato & beans.
