Breast of Chicken

Ingredients:

  • 1 chicken cut into 4 portions
  • 80 ml olive oil
  • 1/2 cup green olives
  • 400gm La Gina Diced Tomatoes
  • 2 garlic cloves
  • 8 baby onions
  • 8 baby waxy potatoes
  • 1 cup white wine
  • 1 tbsp La Gina Tomato Paste
  • 1 tbsp chopped parsely
  • 200gm diced bacon
  • Pinch salt & pepper

Preparation

PREP - 15mins

COOKING - 25mins

Season chicken with salt & pepper. Fry until golden brown then remove. Add onions, bacon & garlic, brown gently. Then add La Gina Tomato Paste. Place chicken pieces back into pan, add olives, potatoes & white wine. Reduce a little & pour in La Gina Diced Tomatoes.  Simmer gently & cook for 20 mins.  Add salt, pepper, parsley to taste.

SERVES 4

Chef's Note: Any cut of chicken can be substituted for this dish.
